摘要

综述了常见的多糖类淀粉膜、壳聚糖膜、胶原膜的改性研究及相关性能,分别阐述了不同的添加物对3种膜的机械强度、拉伸强度、阻隔性能、抗菌性能以及亲水性能等的影响,展现了3种可食性膜在果蔬保鲜、医学上的应用,并对食品保鲜、医学涂层方面应用和加工工艺方面进行了展望。

Abstract

The modification researches and concerning properties about polysaccharides starch film,chitosan film and collagen film are reviewed.The effects of different additives on mechanical strength,tensile strength,barrier properties,antibacterial properties and hydrophilic performance of these three kinds of edible film are expounded respectively.The applications of three kinds of edible film in medical,fruit and vegetable preservation are also described.The applications and processing technologies of the polysaccharide edible film in food preservation and medical coating are expected.
